Unbelievably warming and fragrant dish, which will give you a feeling of satiety for a long time and will warm you up on a rainy day. It is easy to cook and its delicate flavors will surprise gourmets.
Ingredients (for 2 portions):
- Zucchini 100 gr
- Eggplant 100 gr
- Carrot 100 gr
- Celery stalk 100 gr
- Potatoes 100 gr
- Cherry tomatoes without pelt 150 gr
- Garlic 20 gr
- Cumin 2 gr
- Red onion 60 gr
- Olive oil 30 gr
- Vegetable broth 300 gr
- Thyme 10 gr
- Paprika 2 gr
- Boiled beans 50 gr
- Green beans 50 gr
- Chickpea 50 gr
- Green onion 20 gr
- Basil, estragon, cilantro, dill, parsley 15 gr
- Extra virgin olive oil 10 gr
- Beans and chickpea soak separately and boil them according to instruction on the package.
- Peel vegetables, cut them into large pieces. Fry vegetables and green beans with garlic, sage and thyme a little bit on olive oil. Pour broth in the pan. Cut tomatoes in halves and add to other vegetables.
- When the vegetables are stewed, add chickpea, beans, also herbs and spices (paprika and cumin).
- Put vegetables on the plate, strew with estragon and add chopped green onion. Salt the dish and sprinkle with extra virgin olive oil.
